1)Take 3 tomatoes and roast on the grill until the skin comes off. peel and pulse in a food processor. 2)saute 1 onion and 3 cloves of garlic and process these to go with the tomatoes. add 1/2 cup red wine, salt and pepper to taste , oregano and basil 3)take bass fillets and rub with olive oil. sprinke blackening seasoning on both sides and put on the grill for 3 minutes per side. 4)serve with pasta
